Chocolate Cups After Dinner Delights Chocolate

Chocolate consists of products that originate from the seed of the Cacao tree. It is one of the most popular flavours in the world, and is used as an ingredient in chocolate bars, ice cream, cookies, cakes etc. Chocolate was cultivated by civilizations such as the Aztec and Maya. The Aztecs associated chocolate with Xochiquetzal, the goddess of fertility. Chocolate residue found in an ancient Maya pot suggests they were drinking chocolate approx. 2,600 years ago. The cocoa beans were ground and mixed with water to make both sweet and bitter drinks. It was also a luxury in pre Columbian times and the cacao beans were often used as a currency. As early as the 1660's Samuel Pepys diaries has entries relating to "jocolatte". In Jamaica in 1689, Hans Sloane made a milk chocolate drink and later this was sold by the Cadbury brothers.
Three of the varieties of bean used in chocolate are Criollo, Forastero and Trinitario.
Criollo is the most expensive and rarest with a unique flavour.
Forastero is a wild and hardier group, with a strong taste.
Trinitario is a hybrid of Criollo and Forastero and has a wide flavour range.

Chocolate

Barry Callebaut is a Belgian company and major producer of chocolate. They have production sites all over the world, and have been around for more than 120 years. The company was founded by Eugenius Callebaut in 1850 as a brewery. In 1911 they began producing chocolate bars, and in 1925 chocolate coverture. In 1996 they merged with Cocao Barry. Their chocolate is ideal for baking, covering, and dipping.
